Chicken & Broccoli Brown rice bowl

It seems apparent that I like anything in a bowl.  I also like things that are finely diced or chopped.  Love a chopped salad, love pico de gallo, love a rice bowl.  So I made one for dinner and thought I'd share with you.  Let me know if you would like to see it on the menu! It's super easy and takes less time than you think.

Ingredients:

1 head of broccoli, shredded (See below)

1 chicken breast, shredded (See below)

1 8oz package of sliced mushrooms

1 medium shallot

1/2 tsp of garlic

1/2 tsp of ginger

sauce (See below)


Directions:

--Shred your broccoli.

--Shred your chicken.

--Make your rice.  (All these demands seem a bit bossy, my apologies)

-In a medium frying pan heat a tablespoon of olive oil (or ghee, or coconut oil) saute your garlic, ginger, and shallots. 1-2 minutes.






To shred broccoli: throw in the processor and pulse.  So simple and a really fun way to mix it in

To shred chicken: I just throw some salt and pepper on one (2-4 pending on how many people you are cooking for) organic breast.  Heat a tablespoon of cooking oil (olive, avocado, coconut, whatever floats your boat) in a pan over medium high heat.  Saute chicken 3 -4 minutes on each side until brown.  Once brown, add a cup of chicken broth, turn the heat to low, cover and let simmer for about 6 - 8 minutes.  Then...done, should taste great...and with your hands or two forks, shred.  Should shred easy.

Sauce:  1/4 cup tamari (or coconut aminos  2 tablespoons of water  1tsp of lime juice  1/2 tsp of hot sauce  1/4 tsp garlic  1/2 tsp of ginger  1/8 tsp crushed red pepper  Mix together.  That's it!
